Carrot Cake

Carrot Cake

Ingredients ----
• Eggs - 3 nos
• White sugar - 1 cup
• Cooking oil - 3/4 cup
• Plain flour - 1 1/3 cups
• Salt - 1/2 tsp
• Bicarbonate of soda - 1 1/3 tsp
• Baking powder - 1 1/3 tsp
• Cinnamon(Karugapatta) powder - 1 1/3 tsp
• Raw carrot(grated) - 2 cups
• Nuts - 2 cups
• Vanilla essence a few drops

Method ----
Grease a square 20 cm tin. Preheat oven to 150 C. Beat eggs and sugar until frothy. Add oil, stir in sifted dry ingredients. Finally, fold in carrot, nuts and vanilla. Bake for 1 hour.
When cooled, add icing sugar.

For Icing:
Combine 4 oz cream cheese, 3 tbsp of butter, 250 gm of icing sugar and 1 tsp of vanilla.
